Week 4 Meal Prep
After Theo’s big birthday weekend, we are settling back into reality. One way that I like to think about my weekly meals are to set up certain days with a “theme.” For example, Taco Tuesday or Thursday, Burgers and Fry-days, Meatball Monday, etc. I fill those out first and then go from there. This week I’ve got a surplus of grass-fed ground beef so we’re doing tacos twice.
Meal Plan Notes:
– to make jicama tortillas, peel a medium sized jicama and then thinly slice using a mandolin. Keep in an airtight container for up to 5 days.
