Summer Spring Rolls
It’s been pretty toasty down here in San Diego this week. And by toasty, I mean, it’s about 5 degrees hotter than our normal, perfect, beach weather. San Diegans (or maybe just me) will complain about anything that isn’t 75°. Seriously, if it’s 70° then I need a jacket and a bowl of chili.
Anyways, the point is it’s hot and I don’t want to turn on the stove. These spring rolls are perfect for a nice warm day. They are cool, refreshing, and don’t require any cooking!
You don’t even have to follow my recipe. You can pretty much add any veggies or protein you’d like to these. It’s great when you just want to use up extra veggies in the fridge. A few ideas would be cooked leftover chicken, sprouts, maybe a slice of pineapple, whatever you like!
