Roasted Bacon and Butternut Squash
An easy, one sheet, side dish that is ready in 30 minutes. Sweet and smoky roasted bacon and butternut squash is a perfect side to any roast chicken, steak, or pork chops.

Theo and I went to our first baby yoga class and it was so. much. fun. He was totally doing downward dog with me. Seriously, he has been trying to crawl lately and will get up onto his tippy toes while in the crawling position. It was interesting trying to relax and practicing deep breathing while a baby is crying behind you. Basically imagine the most chaotic creatures trying to do the most calming activity. But it was all good fun! Theo loved all the excitement. And it was nice to get out with him and other babies.
Speaking of babies, do you know how much food I burn since having Theo? A lot! I just get side tracked every time I start cooking. The worst thing I’ve burnt was bacon. And not just any bacon. The $8 a package, sugar-free, pasture raised bacon. I about wanted to cry. But I’ve just started to succumb to the overcooked taste of most of my food these days. One thing that makes life a little easier are sheet pan dishes that are easy to throw together. Like this roasted bacon and butternut squash
Just grab some pre-peeled and chopped butternut squash, some bacon, and some spices. Throw them on a pan and roast them. You end up with these perfect caramelized cubes of butternut squash without any effort at all.
Leftover roasted bacon and butternut squash heat up well. So its great for a weekly meal prep. Butternut squash is one starchy carb that I like to throw into rotation every once in a while. Mostly, once I start getting tired of sweet potatoes. Its also easy to make this dish Whole30 by omitting the maple syrup.
