This quick tomato and cucumber salad is the perfect side dish to your morning eggs. A great alternative for those looking to add more veggies to their diet.

Eating vegetables for breakfast can be tricky if you’re not used to it. This quick tomato and cucumber salad is an easy way to transition from fruit or pastries to vegetables for breakfast. Although, you could definitely eat this anytime of the day. I find that I enjoy it best as a side to my eggs and bacon. It’s light and fresh and pairs well with a hearty protein.

The idea here is simple. Just toss everything together and serve! It is best when made fresh. I wouldn’t recommend making a big batch of this. The combination of the crisp cucumbers, creamy avocado, and fresh tomatoes makes this dish a winner. If you’re not on Whole30, adding a little feta takes this salad over the top!

Ingredients
