Pumpkin Chocolate Chip Energy Bites
Tasty energy bites to keep you going all day! These fall inspired snacks are packed with fiber, protein, and healthy fats.
These pumpkin bites are a great snack to have on hand! I like grabbing one or two of these whenever I feel like I need a little something extra in between meals. They are so easy to make because they only use up one bowl. And the coconut oil in the recipe helps make it a breeze to roll them into balls. Barely any of the dough gets stuck on your hands!
Our original name for these were “flactation balls” (flax seed + lactaction) because I was trying to come up with a good snack that had lots of oats, protein, healthy fats, and flax seed. All good nutrients for a nursing mama. But “flactation” isn’t very appetizing. And lactation cookies or bars give off the idea that you HAVE TO be nursing to eat them. Which is not the case at all! These are just delicious and nutrient packed energy bites that can be eaten by anyone. Anytime. But they pair especially well with a warm cup of coffee.
If you leave out the chocolate chips then they also make an excellent dog treat!
