    We took a road trip to Colorado last year and had such a blast. Matt and I drove from San Diego and my best friend drove from Tennessee to meet us there. We celebrated my birthday, ate lots of good food, went hiking, horse back riding, and explored the big landmarks.  In between horse back riding in the Rockies and soaking in the hot springs, we ate at a little diner called Bacon Social House.   • Grain-Free Bacon Apple Pumpkin Pancakes

    I have been waiting 3 weeks to make pancakes. Because Whole30.  I never thought the “no baked goods” rule was a big deal until this round. I’ve been dying to make muffins and pancakes and brownies and all the baked things!     These pancakes are a great way to bring in the fall season. I accidentally came up with these one day when I started making pancakes but realized that I ran out of coconut flour. They turned out really well and now they are one of my favorite pancake recipes. These flourless pancakes packed with fall flavors and are perfectly sweet and savory. Lucy is always very interested in what I’m cooking.

  • Bacon Curried Deviled Eggs

    Today I have prepared for you…  (Can you tell I’ve been watching too much Chopped?)  Bacon Curried Deviled Eggs.  What I love about these eggs is that they are so simple to make. Throw everything in a blender and you’re done.  Here is another great use of the Instant Pot. It really is such a versatile appliance. This is my favorite technique because it makes peeling the eggs really easy. If you don’t have an IP, you can just use your preferred method to boil the eggs.  Bacon and curry give these eggs such a boost of flavor. They make any egg so much heartier.     The only reason I know it’s Fall is because there is pumpkin everything in the grocery stores. Our weather hasn’t changed much in San Diego. It’s still beach weather here!     When I did a Whole30 last year, it was the first time I ever gave up legumes for a month. What I didn’t realize what that I was going to unlock chili’s true potential. An all meat chili.     Matt and I are doing the September Whole30! Today is day 14. And we are crushing it.  My goal this round is to curb my sugar cravings and get a baseline for Theo. I want to experiment and find out if adding dairy or grains into my diet is going to make him gassy or fussy.  Matt’s goal is to lose weight.   • Breakfast Plate

    This is how we do breakfast! Yummy, satisfying, paleo and Whole30 breakfast plates. All using just a cast iron skillet. We do his and hers plates because Matt is on more of a ketogenic diet (low carb, higher fat) and I’m breastfeeding (Need more carbs). So I get potatoes while he gets cucumbers. Or I’ll have some fruit and he will have a scoop of sauerkraut. There are so many combinations of this basic idea.      I love using my cast iron for breakfast because I can layer flavor after flavor into my meal.  I start with bacon so that I can use the delicious bacon fat to cook my potatoes in.   • Summer Spring Rolls

    It’s been pretty toasty down here in San Diego this week. And by toasty, I mean, it’s about 5 degrees hotter than our normal, perfect, beach weather. San Diegans (or maybe just me) will complain about anything that isn’t 75°. Seriously, if it’s 70° then I need a jacket and a bowl of chili.    Anyways, the point is it’s hot and I don’t want to turn on the stove. These spring rolls are perfect for a nice warm day.
