• Instant Pot Whole Roasted Chicken (Whole30, Keto, Paleo)

    March 2, 2018raelaf

This Instant Pot whole roasted chicken is simple and quick to prepare. The skin is flavorful while the meat falls off the bone. It is easy to make as part of your weekly meal prep!   Welcome to January! I might be a little late but when does the New Year stop being new? So far, the year has brought on illness to both Matt and I. We both had flu-like symptoms for days. Neither of us actually got the flu though *knock on wood*. And Baby Theo is as healthy as a horse.  I guess our New Year can only go uphill from here.     We are also kick-starting our year with another round of Whole30. I was starting to get a little…

  • Lettuce Wrapped “Animal Style” Burger

Lettuce Wrapped “Animal Style” Burger (Whole30, Keto, Paleo)

    March 2, 2018raelaf

A Whole30 and keto version of a classic In-n-Out lettuce wrapped animal style burger. A mustard grilled patty topped with grilled onions, special sauce, tomato, and pickles all wrapped up in butter lettuce. My love for in n out burgers runs deep. I’ve never NOT been in the mood for In-N-Out. It’s arguably the perfect burger. Toasted bun, never frozen beef, fresh lettuce and tomatoes, and the spread. Add fries and a chocolate shake and the nostalgia is something I can’t escape.  And although I can just go to In-N-Out whenever I feel like, I do still enjoy cooking dinner at home most nights. Replicating an In-N-Out burger is pretty easy. There are a few key components to this burger. The special sauce, the grilled…

  • Easy 5-Day Whole30 Meal Plan

    March 2, 2018raelaf

An easy 5-day whole30 meal plan to get you started! Cook and prep once during the week and just assemble your meals as you go. Weekly menu and shopping list included. I’m the kind of person that likes to meal prep and plan for the week but doesn’t like to cook every single day. I work a full time job and I just do not have time to cook dinner most nights. So I prep what I can on my days off and I make it work throughout the week. Most meal plans I see involve a new and exciting dish for each meal of the day. I understand the idea behind this but that just doesn’t work for me. And I honestly don’t mind…

  • Smoked Salmon Lox Deviled Eggs (Whole30, Keto, Paleo, GF)

    February 27, 2018raelaf

A whole30 compliant deviled egg full of smoked salmon, capers, red onions, and dill. Smoked salmon lox deviled eggs are a perfect snack or appetizer.   Today is day 18 on our Janurary Whole30. Its been an interesting round for me because of all the food dreams I’ve been having! Last night I had a dream that I ate a corner of a toaster strudel. Just a corner. And I was so disappointed in myself for ruining my Whole30 on day 18! But then I woke up and all was right again.    Also, I can’t even remember the last time I had a toaster strudel. But damn… that sounds pretty good right  about now.    But instead of a frozen pastry for breakfast, how…

  • Veggie Loaded Sausage Frittata (Keto, Whole30, Paleo, GF)

    February 27, 2018raelaf

A quick and easy breakfast that is packed with healthy veggies. This mushroom, asaparagus, and sausage frittata is a perfect addition to your weekly meal prep. Just make it once and have an easy grab-and-go breakfast all week.   Is Frittata Friday a thing? Well, it is now. I have recently become a huge frittata fan. It is just so easy to make! And then I have a quick breakfast for the next several days. I always add a frittata into my weekly meal prep sessions. The flavors vary from week to week so I figured I would share some of the best combinations here.  Recently, Matt has been back on his keto kick. Keto is basically a high-fat, low-carb diet. And I wanted to…

  • one-minute avocado oil mayo

One-Minute Avocado Oil Mayo (Whole30, Keto, Paleo)

    February 26, 2018raelaf

Fast and easy mayo made with an immersion blender and a mason jar. One-minute avocado oil mayo is a perfect base for any dressing or sauce. This recipe is essential for any Whole30 or Keto diet!   I make a batch of this at least once a week and use it as a base salad dressing or for chicken/salmon salads. If you haven’t noticed, avocado oil mayonnaise is expensive! I usually see it for about $7 a jar. The convenience is nice and all but I think I’d rather make it myself and save the cash. Costco sells huge bottles of avocado oil for $12.99. One bottle will make me 4 batches of one-minute avocado oil mayo. And it is so fast to whip up! Avocado…

  • Roasted Bacon and Butternut Squash

    February 9, 2018Rachel

An easy, one sheet, side dish that is ready in 30 minutes. Sweet and smoky roasted bacon and butternut squash is a perfect side to any roast chicken, steak, or pork chops.    Baby Yoga. It’s like trying to herd cats.  Theo and I went to our first baby yoga class and it was so. much. fun. He was totally doing downward dog with me. Seriously, he has been trying to crawl lately and will get up onto his tippy toes while in the crawling position. It was interesting trying to relax and practicing deep breathing while a baby is crying behind you. Basically imagine the most chaotic creatures trying to do the most calming activity. But it was all good fun! Theo loved all…

  • Grain-Free Salted Tahini Chocolate Chip Cookies (Paleo, GF)

    January 1, 2018Rachel

2017 was the Year of the Cookie for me. I tested these grain-free salted tahini chocolate chip cookies at least 27 times before getting them right. I made a batch of them at least once a day. It got to the point where if I didn’t make a test batch, Matt would come home disappointed there were no cookies that day. One batch has never lasted longer than 5 hours. I eat them all up like my life depends on it.      Needless to say, we are both a little cookie’d out. Once the new year rolls around, we are ditching the cookie diet and getting back on track.   But I am still a huge chocolate chip cookie fan. Like… Cookie Monster status. A good…

  • How to Make a Beautiful Trader Joe’s Style Winter Cheese Board

    December 29, 2017Rachel

A fun and festive appetizer for guests featuring a variety of cheeses, meats, nuts, and fruit. Everything is easy to find at Trader Joe’s.      The past few years, Matt and I have skipped the traditional Christmas day dinner and have opted for a winter cheese board. We just snack on it all evening and then call it a night. Its fun, satisfying, and leaves you feeling a little lighter than eating a full turkey dinner. We plan on doing the same thing for New Year’s Eve! So I’ve got a winter cheese board tutorial for you in case you want to join in on our cheese gorging festivities.    Making a cheese board is way easier than it looks. Everything on this board…

  • Holiday Spiced Almond Milk Hot Cocoa (Dairy-free, Paleo)

    December 16, 2017Rachel

This Holiday spiced almond milk hot cocoa pairs well with wrapping presents and hanging Christmas lights. Rich chocolate and holiday spices are mixed together with warm almond milk to create a cozy treat.   Christmas shopping is done and I start work on Monday. I don’t think I am quite ready to leave my little one just yet! I’ve been off for almost 20 weeks with him and I sort of got used to it. But baby snuggles don’t pay the bills, so back to work I go just in time for the Holiday season.   The only minor problem with living in San Diego is that it is 80° outside during December. Imagine wearing shorts on Christmas Day. Its a little hard to get…
