• Meet Lucy the Wonder Dog + Her One Year Adoptaversary

    November 16, 2017Rachel

This is Lucy. She is a dog. She is actually my favorite dog.   I can’t believe it has already been one year since we adopted her! And what a whirlwind of a year it has been for her.  Our first meet and greet with her was not exactly love at first sight. She was a wild, energetic puppy that was 100% more interested in her toys than us. She had already been adopted from the shelter by a family but was returned two weeks later because she had too much energy. This was not the kind of dog I wanted. I wanted a laid back, well mannered dog. But after searching for weeks, I started to get discouraged that we wouldn’t find a dog.…

  • Bacon Wrapped Turkey Breast with Apple Stuffing

    November 13, 2017Rachel

Bacon wrapped turkey breast with apple stuffing is a beautiful paleo and whole30 compliant dish that is perfect for a small Thanksgiving gathering.   We used our fireplace for the first time last night! The only reason I agreed to a fire was so that I could make s’mores. Bacon s’mores to be exact. Which were AMAAAAZING. I may have had 3. I highly recommend putting a slice of bacon between marshmallow, chocolate, and graham cracker.    What does that have to do with bacon wrapped turkey breast with apple stuffing? Nothing. Except maybe the bacon.    A bacon wrapped turkey breast with apple stuffing is a beautiful alternative to a whole turkey. Especially if you are only feeding a small group. We used to…

  • Naturally Sweetened Orange Cinnamon Cranberry Sauce

    November 10, 2017Rachel

A tart naturally sweetened orange cinnamon cranberry sauce without any added sugar! Sweetened with fruit, your guests won’t even know this is a healthy cranberry sauce.   Put down that can of jellied cranberry sauce right this instant! Package cranberry sauce is loaded with sugar! And the canned jellied kind is just plain weird and unnatural, okay?   If you’ve never made your own cranberry sauce then you don’t know what you are missing. It’s something you can’t find prepackaged and it’s super simple to make. Fresh cranberries are easy to find in the produce section this time of the year. The other ingredients are common enough that you might even have most of them in your kitchen already. The only problem with homemade is…

  • Grain-Free Butternut Squash and Sausage Stuffing

    November 7, 2017Rachel

This grain-free butternut and sausage stuffing is good on its own but even better as a side dish on Thanksgiving! It covers all the basic flavors in a good stuffing plus has tons of different textures from the roasted butternut squash to chewy sausage and even a little crunch from the walnuts and sage.    To be honest, I will probably make a traditional stuffing in addition to this grain-free butternut and sausage stuffing since most of my family isn’t strict Paleo.  Having both options is a good way to slowly introduce a Paleo diet to newcomers without coming on too strong.   I’ve made this dish so many times now that I’m going to be all stuffing’d out by the time Thanksgiving rolls around.…

  • 20-Minute Paleo Beef Stroganoff

    November 4, 2017Rachel

This has instantly become one of my new favorite recipes! It is so freakin’ good. Seriously. Try it out!  Matt found this insanely high quality, grass-fed, Waygu beef at our local Lazy Acres. Rumor has it that Waygu beef comes from cows that are massaged daily and served ice cold beers. I’m not sure how true that is but I do know that this was some of the best beef I’ve ever had. It had such a unique flavor just on its own. It is what I used in this 20-minute paleo beef stroganoff. 5 stars. Would eat again.  I’ll admit that I’ve never been a fan of beef stroganoff before. It reminds me too much of Hamburger Helper *shudders*. Not my fondest childhood…

  • Gluten-Free Brown Butter Swedish Apple Pie

    November 1, 2017Rachel

You guys! This gluten-free brown butter swedish apple pie is so good and so easy! The crust is perfectly flaky and has a deep nutty flavor from the brown butter. Perfect for fall weather. Perfect for an after dinner dessert with friends. Perfect to eat the pan by yourself over the course of 12 hours. Yes, I’m guilty.  What is a Swedish Apple Pie? It is sort of a mix between a pie and a crisp and a cobbler.  This recipe is 100x easier than a classic apple pie. The “crust” is poured on top of the fruit and seeps down in between the apples. No fussing with an actual pie crust that needs to be chilled and rolled out. And no bottom crust! Just mix 5…

  • Dark Chocolate Bacon Almond Butter Cups

    October 30, 2017Rachel

Who knew dark chocolate bacon almond butter cups would be so darn good?! They are like a paleo, adult version of a classic Reese’s.   Instead of being classically creamy, they have a hidden smoky crunch inside.  Make sure you cook the bacon a little extra crispy for this. Creamy almond butter and crispy bacon wrapped up in dark chocolate. It’s a perfectly balanced Haloween treat.   Warning: these are dangerously addictive.      We aren’t going trick-or-treating this year because Theo can’t even walk yet. Or talk. Or eat candy. Which means I can’t steal the Reese’s peanut butter cups out of his Halloween stash yet. But that’s okay because I’ve got these dark chocolate bacon almond butter cups to hold me over. Instead…

  • Instant Pot Primal Bone Broth

    October 26, 2017Rachel

Bone broth has some amazing health benefits. It is packed with vitamins, minerals, collagen, and protein. And it is about as trendy as eating kale. For good reason too!    Bone Broth is a nutrient powerhouse! The abundance of minerals that seep out of the bones into the broth create a boost to your immune system. The collagen from the broth helps to reduce inflammation, improve gut health, strengthen bones, promote healthy skin, and reduce joint pain. For a more extensive look into bone broth benefits, check out this article.        So what is bone broth exactly? Bone broth is very similar to a broth or a stock. The main difference is that bone broth is made with roasted bones that are slowly…

  • Bacon and Shrimp Taco Salad

    October 24, 2017Rachel

I know its Fall but it is literally 100° outside. And I know everyone is making pumpkin bread and butternut squash soup right now. And I feel like I should be cooking warm and cozy fall recipes. But it is taco weather in San Diego! Actually, its taco weather 90% of the year here. Plus its Tuesday. So I’m interrupting your regularly scheduled Fall favorites to bring you a super tasty taco salad!       Ever had one of those bacon and shrimp gourmet tacos from Rubios? The ones that cost 3x more than a regular taco? Yeah, those. Imagine those tacos in a salad. But with way more shrimp. And way more bacon.  Well here it is!   Warm shrimp, crispy bacon, fresh…

  • Pumpkin Chocolate Chip Energy Bites

    October 23, 2017Rachel

Tasty energy bites to keep you going all day! These fall inspired snacks are packed with fiber, protein, and healthy fats.   These pumpkin bites are a great snack to have on hand! I like grabbing one or two of these whenever I feel like I need a little something extra in between meals. They are so easy to make because they only use up one bowl. And the coconut oil in the recipe helps make it a breeze to roll them into balls. Barely any of the dough gets stuck on your hands!        Our original name for these were “flactation balls” (flax seed + lactaction) because I was trying to come up with a good snack that had lots of oats,…
