    Instant Pot carnitas was one of the first meals I made living on my own. I remember having it in the Instant Pot while we were unpacking boxes in my first apartment. This was an easy, hands off meal to prepare while we were busy making 300 trips back and forth from our car to the apartment.     So you know how Starbucks has their salted cold foam cold brew? Yeah, so this is my Paleo version of that! I could not believe how good that drink tasted. I also cannot spend over $5 a day for one. So I’ve made my own version and it is quite good And it’s only 3 ingredients!  Just mix the cream, maple syrup, and salt together.     Whip up a batch of this simple cranberry walnut chicken salad for an easy and healthy meal. Perfect for hot weather, lunches, and meal prep!   Homemade chicken salad is just so simple to prepare and so dang tasty. Creamy, crunchy, savory, and sweet. How can you go wrong?   • Week 4 Meal Prep

    After Theo’s big birthday weekend, we are settling back into reality. One way that I like to think about my weekly meals are to set up certain days with a “theme.” For example, Taco Tuesday or Thursday, Burgers and Fry-days, Meatball Monday, etc. I fill those out first and then go from there. This week I’ve got a surplus of grass-fed ground beef so we’re doing tacos twice.    Meal Plan Notes: – to make jicama tortillas, peel a medium sized jicama and then thinly slice using a mandolin. Keep in an airtight container for up to 5 days.

    Sweet and savory make-ahead fritters that are flavorful and packed with veggies.   Want an easy way to sneak in some veggies? These sweet potato and zucchini turkey fritters will do the trick. They are easy to prep ahead of time, hold up well as leftovers, and are packed with healthy veggies. Once you have all the ingredients set out, just dump everything in a bowl and mix it with your hands. Scoop out a 1/2 cup and drop each fritter onto a baking sheet.     The weekly meal plan is up! I’m excited about this series of posts for a few reasons. For starters, it keeps me accountable to having a plan and sticking to it. And it always is living proof that eating healthy doesn’t have to be an expensive laborious task! This week is a little skewed because it’s Theo’s first birthday!! We are celebrating by taking him to SeaWorld. So I haven’t planned anything for Thursday because we will probably be eating at the park.
