Lettuce Wrapped Chipotle Burgers (Keto, GF)

Burger night is something I look forward to each week. Yes, we do burgers once a week because they are so easy to make! And its easy to spice up so they don’t get boring (another favorite is my animal style burger). This week we are having my lettuce wrapped chipotle burgers. Aptly named because they have a serious kick to them!
 
The burger itself is seasoned with chipotle peppers and bold spices. Feta or goat cheese is mixed into the burger itself so you get a spicy kick followed by creamy, tangy pockets of cheese. Then pepper jack is melted on top of the patty. Top it with tomatoes, onions, and a creamy ranch dressing then wrap it up in a lettuce bun. 
 
 
Having a weeknight theme helps make meal planning easier. We always have tacos on Tuesdays and burgers on Fridays. There are so many different combos when it comes to burgers. Buns? Sauces? Toppings? ENDLESS POSSIBILITIES. 
Plus, fries. 
And if you have an air fryer then its game over because you can actually make crispy fries!! 
 

Lettuce Wrapped Chipotle Burger

Servings 2

Ingredients

  • 1/2 lb ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon ground chipotle pepper
  • 1/4 teaspoon ground black pepper
  • 1 chipotle pepper diced (from a can)
  • 1 teaspoon adobo sauce from chipotle pepper can
  • 1 oz crumbled feta or goat cheese

Toppings:

  • 2 slices pepper jack cheese
  • 2 slices tomatoes
  • Marinated red onions
  • Iceburg lettuce sliced to create lettuce buns

Instructions

  1. In a large bowl, combine beef, salt, garlic, ground chipotle pepper, black pepper, chipotle pepper, and sauce. Use clean hands to mix everything together. Try not to over mix the beef though, otherwise it can become tough.
  2. Add in the feta cheese and gently fold it into the beef mixture.
  3. Form the beef into two patties.
  4. Grill the patties or fry them in a hot cast iron skillet to desired temperature.
  5. Melt cheese on top.
  6. Allow the patties to cool for a few minutes before adding the toppings and wrapping in lettuce.
