Holiday Spiced Almond Milk Hot Cocoa (Dairy-free, Paleo)

Christmas shopping is done and I start work on Monday. I don’t think I am quite ready to leave my little one just yet! I’ve been off for almost 20 weeks with him and I sort of got used to it. But baby snuggles don’t pay the bills, so back to work I go just in time for the Holiday season.
The only minor problem with living in San Diego is that it is 80° outside during December. Imagine wearing shorts on Christmas Day. Its a little hard to get into that “Christmas Spirit” when you have to turn the AC on during the day. But none-the-less, Christmas music has been playing on repeat around here, presents are wrapped, and hot cocoa is still being made. It is dairy-free, refined-sugar free and paleo friendly. You can top it with whipped cream, coconut cream, marshmallows, or whatever else you like! I choose to whip up some fresh heavy whipping cream in my Blendtec.
Holiday Spiced Almond Milk Hot Cocoa Recipe Notes:
- For a creamier consistency, try 1 cup full fat coconut milk (from the can) and 2 cups almond milk.
- If you don’t need this to be dairy-free then you could easily use whole milk in place of the almond milk.
