Grass-fed beef shepherds pie is a warm and cozy dish to make for your family’s dinner. Beef and vegetables are topped with simple mashed potatoes and baked in the oven for a comforting meal that everyone can enjoy.
 
I’m living the single mom life this week while Matt is at a realtor training in Miami. It definitely hasn’t been as bad as I thought it would be. Most nights, I’m just entertaining Theo until dad gets home so I can start cooking dinner or cleaning up. So I knew I would need to be very prepared before he left for a week. The first step was to meal prep. I might have gone a little overboard because now I have so much food prepared that I need to actually freeze some of it before it goes bad!

One dish I made sure to prepare was this grass-fed beef shepherds pie. It comes together pretty easily and it’s perfect for me to just pop a slice in the microwave when it’s dinner time. Yes, I know microwaves cause cancer or whatever but when you have a baby you just gotta do what you gotta do. 
It’s also a perfect meal for babies that are self feeders! Theo loves feeding himself mashed potatoes, green beans, and peas. He is still working out how to chew the ground beef but everything in this dish is soft enough to him to have for dinner with me. Because if I don’t have time to make myself a fresh dinner, I definitely don’t have time to steam separate veggies for him.

 

Grass-Fed Beef Shepherds Pie Recipe Notes and Substitutions:

Instant Pot:
You can easily make the mashed potatoes and beef mixture (separately) in the Instant Pot and then bake the dish in the oven. 
If you prefer a more traditional shepherds pie, you could add a cup of frozen corn when you add the peas. 
For delicious version, sprinkle about a cup of shredded cheddar cheese on top of the mashed potatoes before baking.

Ingredients
  1. 2 lbs russet potatoes, washed and cut into quarters
  2. 1/2 cup coconut milk
  3. 4 tablespoons grass fed butter
  4. 1 teaspoon salt
  5. 1 tablespoon cooking fat (coconut oil, avocado oil, or ghee)
  6. 1/2 onion, diced
  7. 1 lb grass fed ground beef
  8. 1 cup shredded carrots
  9. 1 cup frozen peas
  10. 1 1/2 cup frozen cut green beans
  11. 1 tablespoon tomato paste
  12. 1/4 cup tomato sauce
  13. 1 teaspoon salt
  14. 1/2 teaspoon black pepper
Instructions
  1. Preheat oven to 400°f
  2. Instant Pot Mashed Potatoes: Place the steamer insert into the Insant Pot. Place potatoes on top of steamer insert an pour in 1 cup of water. Steam on high for 10 minutes. Use a quick release when finished.
  3. Pour out the water and remove the steamer insert. Add the coconut milk, butter, and salt. Mash until smooth. Set aside.
  4. In a large skillet over medium heat, melt the cooking fat then sauté the onion until soft, about 5 minutes.
  5. Add the ground beef and brown until no longer pink. Break up the meat with a wooden spoon until it is evenly crumbled.
  6. Add the carrots, frozen peas and green beans and cook until warmed through.
  7. Stir in the tomato paste, tomato sauce, salt and pepper.
  8. In a baking dish, layer the ground beef mixture into an even layer at the bottom. Add dollops of the mashed potatoes on top and smooth out the top with a spatula. Use a fork to create lines on top of the mashed potatoes.
  9. Bake for 20 minutes then broil on high for 3-5 minutes until potatoes turn golden brown.
Notes
  1. To make mashed potatoes without an Instant Pot: Boil quartered potatoes until tender. Mix with coconut milk, butter, and salt. Mash until smooth.
