Grain-Free Butternut Squash and Sausage Stuffing
This grain-free butternut and sausage stuffing is good on its own but even better as a side dish on Thanksgiving! It covers all the basic flavors in a good stuffing plus has tons of different textures from the roasted butternut squash to chewy sausage and even a little crunch from the walnuts and sage.
To be honest, I will probably make a traditional stuffing in addition to this grain-free butternut and sausage stuffing since most of my family isn’t strict Paleo. Having both options is a good way to slowly introduce a Paleo diet to newcomers without coming on too strong.
I’ve made this dish so many times now that I’m going to be all stuffing’d out by the time Thanksgiving rolls around. But that’s okay because it’s seriously sooo good. I could eat it 3 times a day everyday (which I have been, trying to get rid of it all). The advantage to this grain free butternut squash and sausage stuffing is that it won’t leave you feeling so stuffed that you can’t move. It’s full of healthy veggies and fats to leave you feeling like you just did your body a favor by devouring 4 servings of this!
Since it has protein and healthy starches already included, it makes for a perfect meal all on its own. Leftovers can be heated in the oven, stoved, or nuked in the mircrowave.
I like to add a handful of spinach to the leftovers and heat it up in a pan so a quick and simple meal.
