Gluten-Free Oatmeal Pumpkin Muffins
The only reason I know it’s Fall is because there is pumpkin everything in the grocery stores. Our weather hasn’t changed much in San Diego. It’s still beach weather here! I’m not complaining, just sayin’.
But that’s it stopping me from baking some pumpkin muffins! Actually I’ve been baking muffins everyday this week so far. Who knew gluten free baking was so difficult?
A lot of people probably did. Except me. So I’ve made overly mushy muffins that were tasty and overly dry muffins that were tasteless. And everything in between. My freezer is full of reject muffins at the moment. But I’ve finally landed on a super simple mini muffin that really hits the spot.
I love any recipe that involves throwing everything into my blendtec. No bowls or mixers required. And it uses simple ingredients that you probably already have. Seriously, you could do this with one hand. Which I did. Because I had a baby in my other arm.
They remind me of a mix between oatmeal and custard. Oats give it a nice hearty texture while the spices pack it with flavor.
Oh and my puppy loves them too.
