Even though I eat a primarily Paleo diet, I actually eat burgers quite often. Come to think of it, I probably eat burgers more often than I did “pre-Paleo.”
My idea of a burger has changed a bit. When we decide on having burgers for dinner, this is what comes to mind. There is no bun anymore and it is eaten with a fork and knife and usually served with some veggies.
My burger game has dramatically changed after Matt came up with these Chipotle Burgers. They are so insanely good. It’s everything you thought you loved about burgers with an added kick of spice and flavor. The beef is seasoned throughout with some pretty bold spices. Chipotle peppers in adobo sauce are minced up and mixed in with the beef. Goat cheese crumbles blow these out of the water. The crumbles don’t melt like ordinary cheese so you just get pockets of creamy tang in between the heat of the peppers. Of course, the outside of the burger is charred and the inside is just barely cooked (we like it rare).
Here is the simple equation to get the perfect texture going:
Cast iron + hot hot heat + bacon fat
Side note: I have yet to find canned chipotle peppers without corn oil in it. If you know of a good brand that is clean, let me know in the comments!
