Bacon Chocolate Chili
When I did a Whole30 last year, it was the first time I ever gave up legumes for a month. What I didn’t realize what that I was going to unlock chili’s true potential. An all meat chili. No fillers. And It all starts with bacon. Trust me, you won’t miss the beans. And your digestive system will be much happier because of it. Here’s the secret, render down the bacon first and then cook EVERYTHING else in the fat. This is a game changer. This is where I would splurge for the pastured bacon since you don’t want to cook your chili in a pool of nitrates.
I love using 3 different meats in it because you get a variety of textures. You’ve got the chewy bacon going on as well as the nice big chunks of chuck and of course the classic ground beef. The chocolate and cinnamon give this dish such a warm and cozy feeling.
My original recipe uses a cast iron skillet and a slow cooker. But this can also easily be done in an instant pot (what I did today). Just sauté everything in the instant pot and pressure cook for 30 minutes.
