• 30 Minute Pumpkin Turkey Chili

    This is by far the easiest chili recipe I’ve ever made. Just a few ingredients and 30 minutes and you’ve got a healthy and delicious turkey pumpkin chili!    I’ve found that adding canned puréed pumpkin (or puréed butternut squash) really helps to thicken up and avoid the soupy chili consistency.    I’m also trying out this new thing where I don’t word vomit all over the recipe pages and let you just get the dang recipe!     The process couldn’t be simpler. Just toss together spices and oil to make a marinade. Let the chicken hang out with the marinade for a bit and then roast it up on a sheet pan.     Use this homemade ranch dressing for everything. Dressings, dips, spreads, pizza, anything and everything.    Why make homemade ranch dressing when the store bought version is so much easier? Well… for me, it mostly comes down to the oil. Store bought dressing tend to use cheap oils like soybean or canola. Stuff I don’t like consuming on a regular basis nor do I want my tiny human consuming.  You can find higher quality, Paleo ranch dressing in the store but you’d better be prepared to spend about 3 times as much for it.     Burger night is something I look forward to each week. Yes, we do burgers once a week because they are so easy to make! And its easy to spice up so they don’t get boring (another favorite is my animal style burger). This week we are having my lettuce wrapped chipotle burgers. Aptly named because they have a serious kick to them!   The burger itself is seasoned with chipotle peppers and bold spices.     Instant Pot carnitas was one of the first meals I made living on my own. I remember having it in the Instant Pot while we were unpacking boxes in my first apartment.     So you know how Starbucks has their salted cold foam cold brew? Yeah, so this is my Paleo version of that! I could not believe how good that drink tasted. I also cannot spend over $5 a day for one. So I’ve made my own version and it is quite good And it’s only 3 ingredients!  Just mix the cream, maple syrup, and salt together.
